Culinary Techniques for Healthy School Meals Project

The National Food Service Management Institute (NFSMI) is developing a free online program consisting of 6 courses designed to help school nutrition teams prepare healthier school meals that appeal to the taste of today's students. Learn about nutrition, food production and culinary techniques that will improve your school nutrition programs. Earn up to 33 credit hours!

ALL Illinois school foodservice staff that complete the six courses will receive a $75.00 stipend and Dietary Guidelines poster set, while funding lasts. To receive your stipend and poster set:

  1. Register and complete all six Culinary Techniques courses at www.nfsmi.org. See tips on accessing the courses below.  
  2. On completion, email your name, school district and district/school address to ilnet@kidsroe.org. Note: Please allow up 7 weeks for processing.

Here are some simple tips to get you started with each course. 

  1. Go to www.nfsmi.org and click on the “My Profile/ Course login” tab located at the top right of the page.   NOTE: If you do not currently have an account with NFSMI, you will need to create one.  In addition, you will need to create login and password. 
  2. Once you are logged in to NFSMI, click on the “Online Courses” tab located on the top menu bar. 
  3. Next, click on the “NFSMI’s Online Course Catalog” link located in the center of the page. 
  4. The six Culinary Techniques courses are listed directly under the “School Nutrition” title.  Click “Register Here” next to each of the titles located on the right side of the page and select registration type.  NOTE:  You will need to register for each course separately.  Once you are registered, the title of each course will appear under “My Courses.”
  5. To begin taking the course(s) you have registered for, click on its title.
